Summer Ceviche
School’s out for summer, guys! Hip Hip Hooray!
Speaking of hips, I need to watch mine because my snack drawer is FULL in the summertime. (Lucky kids!)
Well, I have this TASTY, healthy salad to distract you!
Make this for your beach trips, pool parties, and backyard barbecues and you are sure to get some smiles!
You will need:
1/2 - 1# of peeled and deveined shrimp
2 avocados (sliced like an onion)
1/2 purple onion (diced)
1/2 bunch of cilantro (tear off leaves and chop)
2 Roma tomatoes (gutted and chopped)
1/2 limes (squeezed and juice reserved)
1 cucumber (chopped)
Coarse sea salt and pepper
Yields about 3-4 servings
Directions:
Saute shrimp with a little avocado oil and Blackened Redfish Magic.
Chop shrimp after fully cooked.
After all ingredients are prepared as stated above, add to a large bowl with cooked shrimp.
Add in lime juice along with the sea salt and pepper to your liking.
