Fall Apple Goodness

Fall has always been my absolute favorite season — school begins, cool fronts start to show their amazing selves, pumpkin flavored candles get lit and ahhhhhhh, the house instantly smells like heaven! For some reason, the smells and tastes of Fall really put me in a mood… the BEST kind of mood. We live in South Louisiana so to be honest, Fall isn’t like REAL Fall — and by real, I mean Fall foliage every where you turn. It’s Louisiana’s version of Fall… more like 75 degrees with a major chance of sweating in a turtleneck. — at least this is my experience.

Fall baking just brings so much joy to me. My two teenage girls LOVE to bake! And we are finally in a season as a family where we actually have time to do this. I’ve been buying Fall magazines left and right but I have not found an apple dessert to top this one…

This fall dessert is nothing short of amazing — and if you are an apple lover — allow me to introduce you to your new fave… Apple Bundlets

This recipe has always been my husband’s favorite! Every birthday, myself or Mrs. Annette (Fred’s mother) bake this for him. When we got married, she was so kind to give me his deceased Aunt’s cookbook with this recipe. Every time I open it and see her name, I’m instantly reminded of what a treasure this cookbook is for our family. I was never able to meet her but “Big Nanny” as he calls her has a BIG reputation for being wonderful.

This recipe was originally intended to be a Bundt cake. I simply altered the time to accommodate the Bundlet pans. I will mention both below.

Apple Bundlets

2 c. Sugar
1 1/2 c. Wesson oil
2 eggs

Mix the above ingredients well.

Add:

4-5 small Red Delicious apples (peeled, cored, chopped like an onion)
3 c. flour
1 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
2 tsp. vanilla extract

Bake at 300 degrees until brown. (Approximately 1 hour and 20 min for a bundt pan and about 17-20 min for bundlets)

Use a toothpick to test the inside and try not to eat the whole thing. :)
