Valentine Double Doozies
Ok, ok, ok… Not going to lie… these cookies were pretty darn good and so simple to make.
If you haven’t made cake mix cookies before, you are missing out on a delicious cookie and a huge time saver! With only four ingredients, you can’t help but fall in love with the taste as well as the ease of baking.
Let’s cut to the chase…
Cake Mix Cookie Recipe:
You will need:
1 stick of butter (melted)
2 eggs (whisked into the melted butter)
1 box of cake mix (I used the Valentine confetti mix and can be purchased here.)
1 bag of your favorite morsels
Instructions:
Whisk the eggs and melted butter together.
Stir in the cake mix until it is smooth.
Add in the morsels. (You can put as much as you desire but I typically use about half of the bag.)
Put in the fridge for about 30-40 minutes for it to firm up.
Use a batter scoop to scoop the dough onto a non-stick pan covered with parchment paper.
Bake at 350 degrees for 8-10 minutes.
I found the perfect lavender meltables and dipped half of the cookie before adding on these cute little heart sprinkles. (Links below.)
For the vanilla buttercream: (Cake by Courtney recipe)
2 c. unsalted butter (slightly cold)*
6 c. powdered sugar measured and then sifted
4 tbsp. heavy whipping cream
1 tbsp. vanilla bean paste (You can purchase my favorite here.)
Pinch of salt
*If you leave your butter on the counter top for 20-30 minutes, it should be slightly cold. This is important!
Buttercream instructions:
Beat the butter: In the bowl of a stand mixer fitted with a paddle attachment, beat the butter for about 2 minutes.
Mix the ingredients: With the mixer on low, gradually add the sifted powdered sugar, one cup at a time, mixing a little in between each addition.
With mixer on medium speed, add whipping cream, vanilla bean paste and salt.
Turn the mixer to medium-high speed and beat for an additional 3-5 minutes. The buttercream will become lighter in color and texture.
I used a soft pink food coloring, just a TOUCH to make the icing the perfect pink. You can purchase here.
